This is like a potato pancake but in a casserole dish. My husband’s mother made this for him when he was growing up.
Preheat oven to 375 degrees. Grease a 9×13 baking dish.
In a large skillet fry the bacon until crisp. Remove the cooked bacon to paper towels to drain and reserve the bacon grease.
In a large bowl stir in the bacon grease, chopped bacon, grated onion, and grated potatoes. Mix in the flour, half and half and eggs. Season to taste with salt and pepper.
Pour into baking dish and bake for about an hour, until it is set and golden brown at the edges. Cut into squares and serve with sour cream, if desired.
