I’ll admit it. I’m a snob when it comes to guacamole. Don’t misunderstand! I will eat avocado in any form, with any flavoring … but you can’t call it “guacamole” (around me) unless it’s made like this!
1. Remove pit from avocado and slice pulp into a mixing bowl.
2. In a mortar and pestle,combine a dash of salt, pepper, minced jalapeno and minced garlic. Muddle until liquid starts to absorb into the salt. Add the mixture to the avocado.
3. Cut lime in half and juice over the top of the avocado and spices.
4. Mix the contents of the bowl and be sure to squash the avocado to desired consistency. Add diced onion, tomatoes, cilantro at the end. Stir to combine. Add extra salt/pepper/lime juice to taste.
