Think you don’t like beets? The spicy sweet tangy heat of this Eastern European-inspired dish may change your mind.
Individually wrap the beets in foil and roast them in a 400-degree oven until tender, about an hour. Meanwhile, whisk all of the other ingredients together, except for the parsley. When the beets are cool, remove the skins, cube, and toss with the dressing. Add salt and pepper to taste and garnish with parsley.
