Who said the best things can’t also be the simplest ones? This is one of those instances. All-fresh, uncooked, unprocessed—can’t beat that. This salsa is not smooth or complicated. It is not for the people seeking an adventure or a challenge. Just a simple, tasty, traditional, healthy dish.
Prepare a medium-sized bowl to combine the diced ingredients in. Put the diced stuff in it as you go.
Dice and combine: tomatoes, onion, and cilantro.
Core and remove the stem, seeds, and ribs off one of the peppers. Dice it really tiny. Be careful to not touch your eyes with peppery hands. It is better to hold the pepper with a paper towel or a fork while dicing. Add this pepper to the tomatoes, onions, and the cilantro.
Core the second pepper and dice it in the same way as the first, but do not add it to the salsa yet. Set it aside. Wash your hands really well, so you don’t accidentally put a pepper-covered finger in your eye. (You can tell, I’m really concerned with the well-being of the people while they are using my recipes. )
Cut the lime and squeeze its juice into the bowl with the rest of the ingredients.
Add salt, pepper, and cumin to taste. Mix everything. Taste. If you don’t mind the salsa spicier, add the other hot pepper. Or you can add half of the second diced pepper first, mix, taste, and then decide if you want the rest of the pepper in there.
Mix everything, cover, and refrigerate for about an hour.
Serve with chips.
