This smoky and spicy dip is a great healthy dip alternative to 7-layer dip. The combination of black beans, salsa, and chipotles makes a healthy and very flavorful dip.
1. Place beans, adobo sauce, salt and garlic pepper in a food processor, and pulse until just broken up.
2. Add the tomatoes, lime, jalapeno, red onion and cilantro into the food processor with the beans and pulse until just combined.
3. Serve with fresh grated cheddar, cilantro, a dollop of low fat sour cream and some organic blue corn chips.

This is AWESOME!!!!! I made this for a large gathering and not a drop left by the end of the evening. I think I tripled the recipe hoping to have at least a LITTLE left over, but to no avail. This has become an instant favorite !!
