A creamy dip that can be served with pita chips and veggies! Yummy!
Take your head of garlic, slice just the top off. This will expose most of the heads. Put the garlic on a piece of foil big enough to wrap the garlic in. Drizzle olive oil on top of the garlic (not the 2 tablespoons of oil that comes later). Close up the foil and place in a 400-degree oven. Roast for about 15 minutes or until the whole house smells of wondrous garlic.
Drain chickpeas, reserving liquid. Add all the ingredients into a blender or a food processor. (The garlic should easily come out of the papery skin when squeezed.) Blend until smooth. If it is too thick, you may add the reserved liquid until the desired consistency in achieved.
We love to eat this with baby carrots. It is especially yummy with pita chips! Enjoy!
