My 2-year-old son loves crunchy foods, and granola is a healthy snack he can munch on! I made up this recipe and am so pleased at how amazingly well it turned out.
Preheat oven to 300F. Lightly grease a baking sheet.
Mix oats, almonds, salt, and cinnamon in a large bowl.
In a small saucepan, combine oil, butter, honey, and jam. Bring to a simmer over medium-low heat. Remove from heat, stir in vanilla.
Pour hot liquid over the oat mixture, stir well until thoroughly mixed.
Spread granola onto prepared cookie sheet.
Bake until golden brown, about 20-30 minutes. (For less clumps, stir occasionally during baking. For more clumps, just turn the baking sheet once during baking.)
Cool completely.
Store in an airtight container. Makes about 9 cups or so.

I doubled this recipe as granola goes very quickly in this house and it’s wonderful! The only changes I made are that I used coconut oil instead of vegetable oil (which is something I almost always do) and used pecans instead of almonds because that’s what I had on hand.
We will be making this over and over again!

Just wanted to add that lately I’ve been leaving out the 2T sugar — doesn’t seem to change the taste much, so feel free to amend at will!

Oh MY! This is good! Everyone from my picky son to the dog is loving this granola! The only thing I did different was to add 3 Tbsp. of milled flax seed. This will be my granola recipe from now on! Thanks!

YUMMY! I made it with apricot preserves and sunflower seeds because that it what I had on hand and it turned out great! So much better than store bought granola!
