If you’re from the south, especially the low country, you were raised on red rice! This is a delicious savory side dish that goes well with fried chicken, fish or pork chops.
Fry bacon in a frying pan, remove and drain. Save 3 tablespoons of bacon drippings. Add chopped onion and green pepper to the bacon drippings. Fry until limp. Add tomato paste. Fill the empty tomato paste can twice with water and add to the onion, pepper and drippings in the frying pan. Stir carefully and add sugar, salt, cayenne and black pepper. Simmer for 10 minutes. Pour the rice in a rice steamer and add the mixture to the rice. Crumble bacon into little pieces and add to the mixture. Let the water in the bottom of the steamer come to a full boil, then reduce to medium heat and cook for 45 minutes, stirring several times.
