I threw this together as a quick appetizer the other day, using things I had on hand. You can serve it as a cheese ball or as a spread.
If you don’t have shredded parmesan, feel free to use the powdered stuff—just cut the amount in half.
In a food processor, combine everything except ½ cup of the parmesan cheese. Process for about 30 seconds or until everything is smooth and cohesive. Refrigerate for a couple of hours and then shape into a ball and roll in the remaining parmesan cheese. Or if you are in a hurry, pile the cheese spread attractively in little dishes or on a small platter and sprinkle with the remaining parmesan. I like to serve this with Triscuits or Wheat Thins, but any sturdy cracker will work.
