Simple, tasty, great as a side dish or as a topper on almost anything from pasta to steak.
Place the cherry tomatoes in a glass baking dish (size depending on the amount of servings you will be preparing). Lay them out only one layer high. Drizzle the extra virgin olive oil all over them. Then mix in the minced garlic, salt, and pepper.
Place the dish in a preheated oven of 400 degrees for 45 minutes. Check and stir the tomatoes gently to keep them covered in the olive oil as they cook, so they do not dry or burn on top.
Remove from the oven and serve either as a side dish or as a topper on any pasta or meat dish. (Be careful, the tomatoes are very hot on the inside.)
The more fragrant the olive oil, the more flavorful this dish will be. I used Italian cold pressed extra virgin olive oil, and the dish was very very fragrant and yummy.

YUM I just got a couple pints of cherry tomatoes I am so making these.

These look delicious! Our local gourmet grocery store (I would move in there if they would let me) sells imported Italian canned cherry tomatoes for almost $6.00 for a 28 ounce can. I’ll bet these are much better. I am going to plant two cherry tomato plants this year, so I will be making these often, oh say around August this year…
