A sweet side dish with a spicy bite from the onions. Perfect for healthy dinners.
Saute chopped onions in small pot until tender, but not overcooked, about 5 minutes. Add stock to pot and bring to a boil.
Once the liquid has come to a boil, add couscous and chopped apricots and stir to combine. Remove pot from heat, cover. Let sit for 5 minutes.
Remove lid and add chopped cilantro. Stir together with a spoon, fluffing couscous as you stir.
Serve with grilled fish or chicken.
