A vegan, smoky, and beautiful hummus recipe that can be made in a flash!
Place beets in food processor and blitz until well chopped. Add remaining ingredients except oil, and blitz, scraping down the sides, for 1 minute or so. Taste for seasoning and adjust.
With motor running, slowly add oil. The texture should be thick and creamy. Adjust the amount of lemon juice or oil as desired.
