Description

Layers of cheese mixture and spinach pesto make a pretty appetizer. Very nice for the holidays!

Ingredients

  • 8 ounces, weight Cream Cheese, Softened
  • 1 cup Swiss Cheese, Shredded
  • 1 bag (6 Oz. Bag) Baby Spinach
  • ½ teaspoons Finely Chopped Garlic
  • ¼ teaspoons Salt
  • ⅛ teaspoons Cayenne Pepper
  • 2 Tablespoons Olive Oil
  • ½ cups Chopped Walnuts, Toasted
  • 2 ounces, weight Cooked Ham, Finely Chopped

Preparation

Place cream cheese and Swiss cheese in a food processor bowl fitted with a metal blade. Cover; process until smooth (30 to 90 seconds). Set aside.

Place spinach, garlic, salt and cayenne pepper in a clean processor bowl fitted with a metal blade. Cover; with processor running, slowly add oil until well mixed. Stir in walnuts by hand. Set aside.

Line a 1-quart bowl with plastic food wrap, extending over the edge a couple of inches. Spread slightly less than half of the cheese mixture in bottom of the bowl; top with half of the ham, all of the spinach mixture, the remaining ham and the remaining cheese mixture. Press another piece of plastic wrap onto the top of the spread to seal. Refrigerate until firm (4 hours or overnight).

When you are ready to serve, remove plastic food wrap from the top of the spread. Invert molded spread onto a serving plate. Remove remaining plastic food wrap. (This process is much easier to do when the spread is very cold!)

Serve with sliced baguettes (or other crusty bread) or crackers.
