Description

Easy to make Maui Style Chicken Wings, baked in the oven and finished with zesty sesame seed sauce. Recipe based on Maui’s famous Azeka’s Ribs, which closed in 2006.

Ingredients

  • FOR THE CHICKEN:
  • 14 pieces Chicken Wings
  • Baking Powder, As Needed
  • 1 teaspoon Salt
  • FOR THE SAUCE:
  • 1 Tablespoon Sesame Oil
  • 1 cup Soy Sauce
  • 1 Tablespoon Red Cider Vinegar
  • ⅔ cups Granulated Sugar
  • ¼ cups Brown Sugar, Dark Or Light
  • 1 Tablespoon Molasses
  • 2 cloves Finely Chopped Garlic
  • 1 Tablespoon Basil
  • 1 Tablespoon Fresh Grated Ginger Or 1/4 Teaspoon Dry
  • 1 Tablespoon Roasted Sesame Seeds

Preparation

Prior to cooking wings, pat them dry with paper towels then place them in a plastic bag. Shake with several tablespoons of baking powder and salt. Bake at 375ºF on a rack in the oven with a cookie sheet below to catch drippings for 15–20 minutes, then flip wings and cook an additional 15–20 minutes until both sides are crispy before tossing with the sauce.

For the sauce, in a saucepan (not a frying pan) deep enough so that all sauce ingredients come up about 1/3 up the sides of the pan, add sesame oil and garlic. Heat, then add soy sauce, vinegar, sugars, molasses, and spices. Slowly heat the mixture while stirring and monitoring the temperature. As you approach the caramelizing point, the mixture will begin to bubble and foam. Use caution and avoid letting the mixture boil over. Once caramelized, immediately turn off heat and let cool before coating wings.

Sprinkle coated wings with roasted sesame seeds before serving.
