A tasty side with a good mix between various potato types. (I like to think of them as a cross between baked, mashed, and fried chips.)
Preheat your oven to 450 F.
Place Potatoes (with skins still on) in a pot of salted water to boil until they are fork tender. They shouldn’t be too soft, but on their way to being fully cooked.
After draining the potatoes lay them out on a baking sheet. Use a potato masher (or in my case a large plastic cup) to flatten the smash the potatoes until they are about twice in diameter.
Brush the top of the potatoes with Olive oil, sprinkle with salt pepper and herbs to taste, then place in the oven on the top rack for 25 to 30 minutes or until crispy on the outside.
Enjoy with whatever you like!

Yum! I made these this evening for dinner and we loved them. I love how they got crispy. I drizzled them all with olive oil, and just used kosher salt, pepper, and a little bit of dill. I will make these again, and again!
