I got this recipe from my cousin, who got it from a friend, who I think got it from a restaurant. Nevertheless, it’s the best creamed corn I have ever eaten. It has become a staple at any and every family dinner.
1. Combine corn, cream, salt, sugar and pepper in a pot and bring to a boil.
2. Simmer for 5 minutes.
3. Make a roux from butter and flour, add to the corn, mix well and remove from the heat.
4. Transfer corn mixture to a casserole.
5. Sprinkle with Parmesan cheese and brown under the broiler.
6. Watch your family devour it and ask for more.
