Great snack morning, noon or night!
In a small saucepan, lightly toast the coconut flakes, remove from low heat and set aside to cool down. Once cooled, spread them out on a clean plate.
Peel bananas and on a clean work surface cut into 2-inch pieces. In a bowl, add honey and, using a slotted spoon, add each banana bite to coat in honey, then coat in toasted coconut. Repeat with each honey-coated banana bite. Place each one on a parchment-lined large baking sheet pan or platter and place in the freezer. After 1–2 hours, they will be frozen and can then be transferred to an airtight freezer safe container.
