A pretty darn hot salsa. But I did win the Whole Foods cooking contest (and a great food processor to boot) many years ago with this recipe.
Put the tomatoes, cilantro, scallions, garlic and habanero in a food processor. Process till smooth. Put in a pot and add salt and lime juice. Simmer for 20-30 minutes. Let cool and serve.
Notes:
1. Be careful working with habaneros. Use gloves if you are sensitive. Take out the seeds if you are not a big ole hothead.
2. Trim the bottom stems off the cilantro, but don’t bother de-stemming each strand—who has time for that?
3. Just trim ends off the scallions. Use the white and green parts.
4. Obviously, peel the garlic.
