Smooth and creamy peanut butter, a touch of honey, the crunchiest crumbles of oats and flax with mini M&Ms sprinkled throughout, and best of all, healthy!
Preheat oven to 215ºF.
In a large mixing bowl, combine oats, flax, cinnamon, and salt.
In a small microwave safe bowl, whisk together peanut butter and honey. If peanut butter was refrigerated or is particularly thick, heat it in the microwave for about 10 seconds.
Pour peanut butter and honey mixture into oat mixture and mix well. Spread evenly on a parchment-paper-lined baking sheet. Bake for 2 hours and 15 minutes, stirring every 30 minutes. Allow to cool completely before breaking apart larger crumbles and adding M&Ms.
I love eating this plain with a cup of coffee, served in a bowl of milk, or sprinkled over frozen yogurt.
