Description

Buffalo chicken on a stick with blue cheese dip.

Ingredients

  • FOR THE CHICKEN:
  • 1 pound Boneless, Skinless Chicken Breast, Cut Into 20 Strips
  • ¾ cups Buffalo Sauce
  • 20 whole Wooden Skewers
  • FOR THE SAUCE:
  • 1 cup Light Sour Cream
  • ½ cups Blue Cheese Crumbles
  • ¼ cups Chopped Fresh Mint, Plus More For Garnish
  • 2 cloves Garlic, Minced
  • 1 pinch Sea Salt (or More To Taste)
  • 1 pinch Freshly Ground Black Pepper, Or More To Taste

Preparation

Preheat the broiler to high and place oven rack about 4 inches below the coils. Soak the wooden skewers in warm water for at least 10 minutes (do not skip this step or the skewers will char). Line a large, rimmed baking sheet with tin foil and spray with cooking spray.

Marinate the chicken strips in ½ cup of the Buffalo sauce for at least 10 minutes.

Meanwhile, in a medium bowl, combine sour cream, blue cheese, chopped mint and garlic to make the sauce. Season with salt and black pepper to taste.

Thread the chicken strips onto skewers and arrange on baking sheet. Broil until the chicken is cooked through, about 8 minutes, flipping once halfway through.

Transfer chicken to a serving dish and drizzle with remaining ¼ cup Buffalo sauce. Sprinkle with chopped mint leaves to garnish. Serve with blue cheese dip.
