A great side dish for two. Serve with meatloaf, hamburgers on the grill or on its own. It is oven-baked so no oils to contend with!
Preheat oven to 425 F.
Place cut potato wedges into a large mixing bowl. Add melted butter, onion salt and pepper. Using clean hands mix potato wedges to evenly coat. Add them onto a non stick 9″ x 12″ rimmed baking sheet (or spray baking sheet with your favorite cooking spray). Place coated potato wedges in a single layer and put it into the oven. While they bake let’s make the brown gravy.
In a saucepan add low sodium beef stock. Heat on medium high heat. Add cream, pepper, bay leaf and parsley and stir well with a whisk. In a small bowl or ramekin add cold water and cornstarch. Mix well and add this into the saucepan. Whisk it in and the gravy will begin to thicken. Once it does, reduce heat to medium low. Stir frequently until ready to serve. Remove bay leaf before serving and serve in a gravy bowl.
Check potato wedges after 20 minutes and flip them over to evenly bake. Pierce potato wedges after another 10 minutes. They are done when they are tender and browned to your liking. Serve immediately with a side dish of gravy.
Dip wedges into gravy and enjoy! It is a family favorite with grilled hamburgers or meatloaf. Enjoy!
