Description

Sometimes all you need is a club sandwich with some jazzed up mayo to make you feel perfectly happy. The trick is all in your ingredients.

Ingredients

  • FOR THE MAYO:
  • 1 whole Avocado, Cut And Peeled
  • ½ cups Mayonnaise
  • ½  Lime, Juiced
  • Salt And Pepper, to taste
  • FOR THE SANDWICH:
  • 3 strips Bacon
  • 2 slices Good White Bread, Toasted
  • 3 slices Turkey
  • 2 leaves Butter Lettuce, Washed
  • 2 slices Tomato
  • Salt And Pepper, to taste

Preparation

For the mayo:
Smash avocado with a fork. Add mayonnaise and lime juice and mix well. Season to taste with salt and pepper, set aside.

For the sandwich:
Cook bacon. You can do this in a fry pan but I find it’s much easier to cook bacon in the oven. Simply place bacon on a cookie sheet then pop it in a 425ºF oven for 18–20 minutes. Once cooked, drain bacon on paper towels. There is much less to clean up doing it this way and the bacon comes out perfectly crispy.

Once all ingredients are assembled, build your sandwich. In my opinion, there is a trick to layering this sandwich so everything doesn’t just fall out on the first bite. Start with a spoonful of avocado mayo smeared on both slices of toast. On one slice, place turkey. On the other slice, layer the butter lettuce, tomato, then bacon. Season to taste with salt and pepper. Close the sandwich and enjoy whole or cut in half!

Tip: A few bread and butter pickles and a hand full of potato chips are always the perfect accompaniment.
