Pesto-topped tomatoes with feta and mozzarella cheese.
Wash tomatoes. Slice tomatoes about 1/4 – 1/2 inch thick. The thicker the better if you really like the tomato flavor. Place slices in a single layer in a casserole dish. Spread 1 teaspoon or more of pesto onto each slice of tomato. We really like the pesto flavor, so I am generous with it. Just play around with it until you figure out how much you like.
Salt and pepper to taste. Sprinkle crumbled feta cheese over tomatoes. Sprinkle mozzarella cheese over tomatoes. You can sprinkle some fresh basil on at this point if you wish. Bake in a 400 degree oven for 25-30 minutes or until the cheese is well melted and has started browning the way you want it. Enjoy!
