Lunch option any day of the week or a terrific snack!
In a bowl, add sliced avocado, lemon juice, black pepper and salt. Mix very gently with clean hands.
In a small bowl, add sour cream and hot sauce. Stir well.
To assemble wrap, lay tortillas on clean flat work surface. Spread sour cream/hot sauce mixture on surface of tortillas with an offset spatula. Add several slices of tomatoes and sliced avocado. Top with fresh arugula. Fold the bottom of each filled tortilla inward and roll filled tortilla closed.
I like to cut my wrap in two and serve. Enjoy!
