Exploding with chocolate chunks, these Chocolate Chunk Coconut Energy Bites are delicious and healthy too!
In a large mixing bowl, combine the almond butter, vanilla, salt, honey and cocoa powder. Add water one tablespoon at a time just until smooth. Once you have a smooth consistency (when it looks like brownie batter), add the ground flax seed, shredded coconut, oats and chocolate chunks and stir until everything is combined. Roll dough into 1 inch sized bites. Place in a container and chill.
