Grilled baguette topped with sweet grilled peaches and topped with mozzarella cheese and fresh basil.
Heat grill to low heat.
Into a small bowl, add wine and honey and mix well. Brush mixture all over the peaches and place peaches on grill. Roast each side for about 2 minutes. Take peaches off the grill onto a platter and let them cool. Peel the skin off the peaches, slice each peach into 8 slices and set aside.
Into another small bowl add olive oil. Brush olive oil on both sides of the baguette slices. Place baguette slices on grill and gill until lightly crisp, about 2 minutes. Remove from grill.
Take one slice of peach and place it on a baguette slice and top with 2 halves of mozzarella cheese and a bit of fresh basil. Repeat until no more ingredients remain. Serve right away.
