Description

Pan-fried plantains with cilantro, lime, garlic and spices. Topped with a paprika aioli.

Ingredients

  • FOR THE FRITTERS:
  • 2 whole Ripe Plantains, Peeled
  • 2 whole Limes, Juiced
  • ½ cups Cilantro, Chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Pepper
  • 1 teaspoon Salt
  • 1 whole Egg
  • ¼ cups All-purpose Flour
  • 4 Tablespoons Olive Oil
  • FOR THE AIOLI:
  • ¼ cups Non-fat Plain Greek Yogurt
  • 2 teaspoons Paprika
  • ½ whole Lime, Juiced
  • 1 teaspoon Garlic Powder

Preparation

1. Preheat oven to 400 F. In a medium bowl, mash plantains with a fork or a potato masher until no large chunks remain. Add the lime juice, cilantro, spices, egg and flour. Mix together until completely combined.
2. In a large frying pan, add olive oil. Turn on medium high heat. Once oil is shimmering, add ¼ cup of plantain batter per fritter into the hot oil. Each batch should consist of about 4-5 fritters so as not to overcrowd pan. Once fritters are golden brown on the bottom side (usually takes 30 seconds to 1 minute) flip them over and continue to cook on the other side until golden brown. Remove from oil and place on a large baking sheet.
3. Repeat with the rest of the batter (makes about 8 fritters). Once all of the fritters are done and on the baking sheet, place baking sheet in the oven for 10 minutes. Serve immediately with the aoili.
4. Meanwhile, make the aioli. Add the Greek yogurt to a small bowl. Add paprika, lime juice and garlic. Mix together until evenly combined. Refrigerate until ready to serve.
