Description

Orzo cooked in milk and chicken broth makes for an easy and delicious side dish.

Ingredients

  • ½ Tablespoons Unsalted Butter
  • 1 teaspoon Pepper
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 1 teaspoon Chili Powder
  • 1 cup Orzo
  • 1 cup Low Fat Milk (1%)
  • 1-½ cup Low Sodium Chicken Broth
  • ½ cups Greens (I Used A Mixture Of Baby Spinach, Arugula, Swiss Chard)

Preparation

1. In a small saucepan over medium-high heat, add butter. Once melted and spices and orzo. Stir until evenly combined and let orzo toast slightly, for about 2 minutes.
2. Add milk and chicken broth and bring to a boil. Stir and reduce heat to medium and simmer until orzo is tender and most of the liquid has been absorbed, about 15 minutes.
3. Remove from heat, add greens, stir, and let it sit for 2 minutes until all of the liquid is absorbed and greens are wilted.

I used 1 teaspoon NOT 1 tablespoon for each of the spices, and it was STILL quite bite-y. DO NOT use a tablespoon unless you like to have your mouth burned up.
But I did like the spinach in there….
