Description

Kashi cinnamon cereal replaces most of the flour in these soft, tender (not to mention pretty healthy) squares that are bursting with apples and dried cherries.

Ingredients

  • 2 cups Kashi Go Lean Crisp Cinnamon Crumble Cereal, Finely Crushed
  • 1 cup Whole Wheat Flour
  • ½ cups Dried Cherries
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoons Nutmeg
  • ⅛ teaspoons Allspice
  • 1 teaspoon Baking Powder
  • ½ cups Applesauce
  • ½ cups Liquid Sugar In The Raw
  • 2 whole Eggs
  • ¼ cups Honey
  • ¼ cups Canola Oil
  • 1 teaspoon Vanilla Extract
  • 2 cups Honeycrisp, Gala, Or Fuji Apples, Diced

Preparation

1. Preheat oven to 350°F.

2. In a medium bowl, mix first seven ingredients (cereal through baking powder). Mix well, then set aside. In a large bowl, mix together applesauce, liquid sugar in the raw, eggs or egg substitute, honey, oil and vanilla. Then add diced apples and mix well.

3. Add dry ingredients to wet mixture and mix well. Spread evenly into an oiled and floured 8″ x 11″ baking pan and bake 40 minutes or until a knife inserted in the center comes out clean.
