This is the perfect side dish for any roasted meat or chicken.
Preheat oven to 400ºF.
Peel veggies and cut into 1 1/2″ pieces, all about the same size. Toss with olive oil and spread on a rimmed cookie sheet. Season with salt, pepper and Italian seasoning.
Bake until tender, about 40 minutes. Transfer to a serving platter and enjoy.
