Fresh figs topped with creme fraiche and served with prosciutto.
Wash and dry figs. Cut the figs half starting from the stem end. In a small bowl, mix the demarara sugar into the crème fraîche. Place a dollop of the crème fraîche mixture over the cut side of each fig half.
Cut each slice of prosciutto in half. Roll up the slices and serve with the figs.
