Baby Bok Choy with Sesame-Maple Sauce.
Snip off the ends of the bok choy and check for dirt. Rinse off the bok choy with a damp paper towel or in a salad spinner. Set aside.
Heat up butter and chicken broth in a large skillet or saute pan and bring to a simmer. Arrange bok choy in the pan in a single layer, lightly sprinkle them with sea salt, cover the pan and simmer for about 5-7 minutes.
Take off the cover, transfer the bok choy to a plate and cover to keep warm. Add toasted sesame oil and some maple syrup into the pan, stir and bring to a boil until half the liquid has cooked off.
Once it’s reduced, pour the sauce over the baby bok choy and sprinkle with sesame seeds or gomasio. For some extra heat, add some hot pepper flakes on there, too!
