This recipe is from a wonderful friend and neighbour at the cottage.
Grate cheddar into a large bowl. Add cream cheese, sherry (or orange juice), olives and seasonings. Blend until smooth. Shape mixture into a ball (about 3 inches in diameter). Refrigerate for at least a couple of hours or overnight.
About 30 minutes before serving, combine frozen orange juice and coconut. Roll cheese ball into this mixture. Serve with crackers.
