Baked potato wedges dripping with low fat blue cheese dressing &and blue cheese crumbles. The perfect side dish to just about anything.
Preheat oven to 450 F.
On a rimmed baking sheet toss potato wedges in olive oil. Bake for 45-50 minutes until golden brown and crispy.
Meanwhile simply stir blue cheese dressing and Greek yogurt together in a bowl or Pyrex cup. Keep refrigerated until ready to use.
Remove pan from the oven and plate wedges. Drizzle with dressing then sprinkle the top with blue cheese crumbles and sliced green onions.
Enjoy.
