Description

These granola bars are delicious and healthy. You can substitute M&Ms, raisins, dried fruits or nuts in place of the chocolate chips.

Ingredients

  • 2 cups Oatmeal (quick Or Rolled Oats)
  • ¾ cups Brown Sugar
  • 3 Tablespoons Ground Flax Seed (optional)
  • ¾ teaspoons Ground Cinnamon
  • 1 cup Whole Wheat Flour
  • ¼ teaspoons Salt
  • ¼ cups Honey
  • 1 whole Large Egg, Lightly Beaten
  • ½ cups Applesauce
  • ¼ cups Vegetable Oil
  • 2 teaspoons Vanilla Extract
  • ¾ cups Semi-Sweet Chocolate Chips

Preparation

1. Preheat oven to 350 degrees F. Generously grease a 9×13 baking pan.

2. In a large bowl, mix together the oats, brown sugar, flax seed, cinnamon, flour and salt. Add honey, egg, applesauce, oil and vanilla. Mix well. Add chocolate chips and stir gently.

3. Press mixture into the baking dish. If you want thicker granola bars, just use about 2/3 of the pan and leave the rest empty.

4. Bake for 25 minutes until the bars start to turn golden brown around the edges.

5. Cool for 5 minutes and then cut into bars.

I thought these would be a healthier alternative to cookies, but I didn’t trick my kids. They said they were yucky! But I still gave them 4 mitts! I really like them!! They are chewy and not too sickening sweet (even though we used sweetened applesauce) They are so quick and easy to make. I had all the ingredients on hand in my pantry/fridge which made for a perfect activity for a rainy day.
