Description

A great roasted potato recipe that can pair well with almost any main course.

Ingredients

  • 2 pounds Red Potatoes, Quartered
  • ¼ cups Onion, Diced
  • ¼ cups Butter, Melted
  • 2 Tablespoons Honey
  • 2 teaspoons Dry Mustard
  • 2 pinches Salt
  • 2 pinches Black Pepper, Ground

Preparation

1. Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11×7 inch baking dish with nonstick cooking spray.
2. Place potatoes and onion in a large mixing bowl. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion. Stir well and pour onto baking sheet.
3. Bake in the preheated 375 degrees F (190 degrees C) oven for 30 to 45 minutes or until tender, stirring halfway through the cooking time.
