On a recent trip to see my mom I picked up some fresh Missouri peaches. I had heard about this recipe and after some tweeking I love it. Its so refreshing. and so yummy over ice cream.
Crush peaches with a pastry blender or run though a food processor. They need to be a little chunky but not pureed.
Mix with sugar and lemon juice and let stand 1 hour.
In heavy saucepan over med heat, cook until thick and jellied.
Pour into pint jars and process in hot water bath for 20 min.(or as directed according to your altitude)
Serve over toast or vanilla ice cream. YUMMY!

I am so sorry that I questioned you again. I re-read the recipe and was not following the cooking instructions. I was only cooking for about 30 minutes.

I have tried this recipe twice and cannot get it to jam. How long should I cook it, should it boil, be a rolling boil?
I do love the simplicity if I can get it to process!

I want to try this as it seems so simple but I notice that you do not give the amount of lemon juice to be used.
