Creamy Mashed Potatoes

Description
Creamy mashed potatoes with garlic and herb cheese.
Ingredients
- 2 pounds Potatoes, Peeled And Cubed
- 6-½ ounces, weight Boursin Light Garlic And Herbs Gourmet Shreadable Cheese
- ⅔ cups Half-and-half
- ¼ cups Butter
- ¼ teaspoons Salt
- ¼ teaspoons Pepper
Preparation
Place potatoes in large pot and cover with water. Bring to a boil. Reduce heat to medium and cook for 20 minutes. Drain and return to pan. Warm on stove for another minute. Remove from heat.
Preheat oven to 350ºF.
In a mixing bowl, combine potatoes and remaining ingredients. Mix until smooth. Spoon into a 2-quart baking dish.
Bake for 10 minutes.
