This quick and easy veggie dish never fails to garner compliments and requests for the recipe. I rarely like to mess with adding a lot to vegetables, but I can’t resist this dish that was passed down from my husband’s family. But when I asked who Aunt Hazel was, my husband and his family had no idea.
Allow mixed vegetables to thaw at room temperature.
Saute the chopped onion and celery in some butter until onion is transparent. Combine sauted onions and celery with the mixed vegetables. Mix in the mayonnaise and grated cheddar cheese.
Combine the crushed Ritz crackers with 1/4 cup melted butter and arrange over the top of the vegetable mixture. Bake at 350 degrees for about 45 minutes.
