Our go-to grilled summer potatoes, yum!
Place potatoes in a large saucepan and add enough water to cover by 1 inch. Bring to a boil over medium-high heat, and then reduce to a simmer. Cook until just tender, about 15 minutes. Don’t overcook. Drain and then cool slightly.
Preheat grill to medium-high heat and oil grill rack well.
Cut potatoes into 1/4” thick slices. Drizzle with the olive oil and toss gently to coat the potatoes. Sprinkle with salt and pepper.
Place potatoes in a single layer on the hot oiled grill grates and grill about 3 to 5 minutes on each side, or until nice char marks show. Remove from grill and place on small platter. Sprinkle with fresh dill and feta. Squeeze on some fresh lemon juice and serve immediately.
