Description

Delicious cranberry orange granola bars coated in an irresistible layer of white chocolate.

Ingredients

  • 2-½ cups Rice Krispies
  • 2 Tablespoons Ground Flax Seed
  • ¼ cups Peanuts, Chopped
  • ¼ cups Dried Cranberries, Chopped
  • 2 Tablespoons Flaked Coconut
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Cinnamon
  • ½ cups Creamy Peanut Butter
  • ½ cups Brown Rice Syrup
  • 1 teaspoon Vanilla Exract
  • 1 teaspoon Orange Extract
  • 1-½ cup White Chocolate Chips, Melted

Preparation

Mix the rice krispies, flax, peanuts, dry fruit, coconut, salt and cinnamon in a large bowl. Measure out the peanut butter and brown rice syrup in a microwave-safe bowl, and microwave for about 30 seconds, or until runny. Once you take that out of the microwave, add in the vanilla and orange extracts and mix them together well.

Pour the wet ingredients over the dry ingredients and mix very well, making everything is sufficiently sticky.

Line a 7″ x 11″ pan with parchment paper, and pour the mixture in, then freeze it until it hardens up, usually 20-30 minutes.

Meanwhile, melt the white chocolate chips in a Dutch oven. Once the granola bars are hard, pour/spread the melted chocolate over it the granola and place back in the freezer until the chocolate sets. When it has finished setting, take it out and cut it into 12-16 bars.
