My German American Grandmother’s “Cooked Cheese” or German Cheese Spread recipe. It’s buttery and creamy and cheesy, and best served on fresh homemade bread. You can add anything you like … Dill weed, red pepper flakes, herbs, etc, but traditionally caraway seeds are added (I personally hate them so I don’t).
In a medium-sized bowl, mix all ingredients well, cover it with plastic wrap and let stand in a warm place for 1 hour.
Then put it into a heavy pan and simmer over low heat stirring often until thoroughly blended, well heated and smooth in consistency. This will take about 20-30 minutes. It helps to use a whisk once the cheese starts to melt to get out the lumps. Be careful not to let it burn on the bottom.
Can be stored in the refrigerator in an airtight container.

My mother used to make this cooked, spreadable, creamy cheese. We loved it especially when she baked some bread to go with it. Her version did include caraway or fennel seed, which can of course be easily added. Delicious! Thank you
