These are great and refreshing. This recipe came from my mother and I have no clue where she got it, but she was always creating. She really did not have any measurements to it, and I did it by taste, too. I tried to figure out some measurements, but I really am a to-taste cook.
1. Combine the first five ingredients. Add enough cream so that cheese will spread easily.
2. Place bread slices between pieces of waxed paper and roll until thin.
3. Spread cheese on bread, top with smoked salmon.
4. Top each slice with spinach.
5. Roll.
6. Wrap each roll in plastic wrap and chill.
To serve, slice each roll in about six pieces.
