A quick and delicious snack that I make for myself or the grandkids.
Melt butter and brown sugar in a saute pan and add apple slices. Saute until apples are soft and coated with the butter and brown sugar, but not mushy.
Place one-half of the apple mixture with the glaze on a tortilla and sprinkle with a bit of lemon juice. Add enough of the shredded cheddar cheese to cover the apples. Cover with another tortilla and press lightly. Repeat the process with the other two tortillas.
Heat a griddle or a large skillet. I use a pat of butter and sprinkle lightly with brown sugar to give a light glaze to the tortillas. Place the tortillas on the griddle or skillet and cook for approximately 2 minutes on each side. Remove to a cutting board and slice into wedges. I use a pizza cutter.
