Refreshing, crisp and full of lemon flavor.
Combine asparagus and tomatoes in a medium bowl.
In a small bowl, whisk together olive oil, lemon juice and salt and pepper. Pour over asparagus and tomatoes and toss to coat.
Transfer to a serving dish and top with parmesan slices (use a vegetable peeler to get rustic “slices”) and parsley.
Serve cold.
