Description

Great simple and yummy way to cook that broccoli siting in your fridge. Highly adaptable with addition of other veggies or seasoning.

Ingredients

  • 3 cups Broccoli
  • 2 cloves Garlic, Thinly Sliced
  • 4 Tablespoons Extra Virgin Olive Oil
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 Tablespoon Lemon Zest
  • ¼ cups Grated Parmesan Cheese
  • 2 Tablespoons Lemon Juice

Preparation

Preheat oven to 425ºF.

Cut your broccoli into bite size florets and put on a cookie sheet with the garlic. Drizzle the olive oil over the broccoli, and season with salt and pepper. Toss.

Roast in the oven for 20-25 minutes until the broccoli and garlic edges are cripsy and brown. Place in a bowl and add lemon zest, cheese, and lemon juice and combine.

Serve warm or at room temperature. Enjoy!
