A glorified sausage ball with a KICK! A great party appetizer.
First of all, let me start off by saying this recipe is VERY flexible and can be adjusted according to the spice level you want. I have used sliced jalapenos, whole ones, etc. I have used both hot sausage and mild sausage, so it’s really up to you.
1. Cut jalapenos in half lengthwise and remove stems and seeds. Keep both halves next to each other, as you will be putting them back together later.
2. Stuff each jalapeno with Monterey Jack cheese and put the halves back together.
3. Mix Bisquick, sausage, and sharp cheddar cheese together (I use my hands and work it together like making a dough) until its consistency is like playdough.
4. Take a stuffed jalapeno and cover it, making an egg shape with the Bisquick mix. I take the mix and make a ball and then poke my thumb down into it, place the pepper in it, then close it up, but do whatever works for you.
5. After your “egg” has taken shape and your jalapeno is tucked safely inside, beat the egg (the real egg) and pour into a plate. Also in another plate, put the Shake ‘n Bake. First, roll the “egg” in the real egg, and then roll it into the Shake ‘n Bake to coat it.
6.Place your “eggs” onto a greased baking sheet and bake at 350 degrees for 20 -25 minutes or until crisp. Enjoy!
