A super simple, delicious accompaniment to a holiday meal, especially good served alongside a honey or smoked ham. If you like creamy casseroles and you like pineapple, you will love this side dish!
Cream butter and sugar. Beat in 4 eggs. Add the whole can of pineapple, juice and all. Stir in bread cubes.
Bake in a greased casserole dish in a 350F oven for 1 hour.
This is a completely original recipe by my grandmother. It was developed at Long Hill Chapel because they always had leftover communion cubes. I’ve always enjoyed this dish with a Christmas ham!

I have had this recipe for years. Haven’t made it for awhile, though. It is awesome, it’s the same as yours, except I only use 1/2 cup of sugar. My mother has been making this since the 70’s! It’s a favorite in my family.
