Herbed tomatoes are such an easy and flavorful side dish! Throw in whatever herbs your heart desires.
Heat the olive oil over medium heat in a large skillet. Add the minced garlic and sauté for about 1 minute. Add the tomatoes and stir to coat with the olive oil and garlic. Saute until the tomatoes start to split, but have not completely lost their shape. Add the herbs and salt and pepper. Saute for about 2 minutes. Serve warm.
