Cheesy and creamy potatoes!
These potatoes are wonderful to start in the oven in the ceramic part of your crock pot and then keep warm when done cooking in your crock pot. Great for big events and holidays.
Preheat oven to 350ºF. Place all ingredients into a large mixing bowl and combine well. Place into a greased baking dish or crock pot. Cover with foil and bake covered for 1 hour, then uncover and bake at least 1 hour longer. These can be assembled the day before and then baked.

These are a staple in Utah, only we call them funeral potatoes because they are easy comfort food that can be served to a large group. We like to melt a stick of butter and pour it over 2 cups of cornflakes, toss until coated and then top the casserole with that. It sounds weird but it adds a nice taste and crunch.
